Welcome to our channel, thanks for stopping by!
A little bit about us:
In 2014, we set out on an earnest search for a corn tortilla with exceptional flavor and integrity. Our quest took us to Oaxaca, Mexico, where we met farmers whose families have been cultivating traditional maize for centuries. It was there that we experienced our first perfect, true tortilla.
Today, Masienda proudly partners with hundreds of traditional farmers to grow, source and offer the highest quality single-origin ingredients for both Heirloom Whole Kernel Corn and Heirloom Masa Harina. We continue to collaborate with chefs to develop in-house, specialty masa programs for their restaurants, while also working to create thoughtful resources, tools and value-added products to lead a new standard for masa quality, preparation and consumption.
With this channel we hope to help spread our corn and masa expertise for all to enjoy!

La Siembra - Planting Heirloom Corn in Coastal Oaxaca
In the mountainous coastal communities of Oaxaca, olotillo corn is planted by hand on the hillside using espeques (long stakes). Planting is coordinated around the rains, and typically happens around the summer solstice. This traditional, manual method of farming is dying out, as the average age of the farmers in these communities increases.
Exilino Salinas Escamilla began planting corn at age 12 in his hometown of Nopala. He is one of the few young people who still makes a living this way today.

I’m 55 pages into Masa, decided to look up a recipe for masa tortillas. What are the odds I find the man responsible for this incredible tome? Thanks for making me a better chef.
It’s fabulous!
This is supremely and utterly underrated In every way
Yummo 💛
I have the Masienda tortilla press, looks like now I need to get their comal
Where can I get the cheese
Red chili, green chili & some queso, plain simple and delicious. Had these for the 1st time when I met my wife, she's from Mexico.
Beautiful
She's is funky...respectfully.

Hi there- which Molcajete size is featured here? Is this the new small size?
I want to try it 🔥🔥🔥🔥😋
Instead of salt use consomé de tomate has way more flavor
U need to use fried tortilla chips and u need tor fry in oil ur chiles n other ingredient’s then add water n boil them then blend it
Beans need to be boiled for 3 hours slow cooked n covered add salt add hot water as needed and at the very last hour u add onion n garlic if u add it too soon it will dissolve or be over cooked
Never grill garlic it kills the strong flavor it needs to be raw not cooked also do not add onion onion is not molcajete friendly 😂 it will not mash as good plus its better without it😊
All u need is smash one avocado cube another avocado add 1 finely chop serrano add sea salt n olive oil a small amount of water then mix n walla this will not brown . N it taste grate 😊
If u happen to be doing that it means u didn’t tortillar la masa u only made it round into a ball n placed it down u need to grab masa rounded pat it back n forth in ur hands light pressure then make it into a ball slam it to the tortilla presser n press walla😂 that tortilla will rise and u need to turn it over as soon as ur done pressing ur second one . The tortilla rise comes from how u prep how u handle the masa n how u warm it up it takes practice
Do ur hand like a J when letting go half way of the tortilla so it wont fold over
They also use this method to do buñuelos
Hei why you can't ship to Asia especially Indonesia?
jeeeeeez. <3
I came here to see what I was doing wrong. I have to let the tort sear. 👍🏽 muy bien. Gracias!
I really want to visit Oaxaca! Such a interesting part of Mexico!
Oaxaca is truly one of Mexico's most vibrant and culturally rich regions. You'll love the colorful markets, the delicious food (try the mole and tlayudas!), and the beautiful colonial architecture. If you decide to go, please don't hesitate to check out our Oaxaca guide: masienda.com/blogs/learn/where-to-eat-oaxaca ❤

Thank you for this beautiful video. I plant corn by hand myself and I know how much work it is. That's why I have great respect for all the people who still grow corn this way. Greetings from europe to mexico, the homeland of corn.
Hi there! Thank you so much for your comment! It's heartening to hear from someone who understands the effort that goes into planting corn by hand. Your respect for this traditional method means a lot. Saludos! ❤

Hi there! Yes, you can use Flour Corn, like our Heirloom Corn Masa Harina, instead of Dent Corn for your recipes. masienda.com/collections/all/products/heirloom-corn-masa-harina?variant=43309016711317
One of my favorites besides the suadero when i go to mexico i get the mexican rice and hard boiled eggs 🔥🔥🔥 or cecina 😅
So good! 🔥
They have to fluff no fluff no tortilla 😢❤
So basically it's all the same thing with about four different ingredients in different proportions but 55 different names. I see now.
Each version brings its own special twist, celebrating different flavors and culinary traditions. That's the beauty of tacos-many names, always delicious!
Thats too much.
**Not enough
You forgot gringas
Yes!
And with that said where is my plate cause all looked so damn delectable 😋
Coming right up!
Thanks for sharing this info, the complexities between related foods are always exciting to learn.
